WINEMAKING: fermentations took place in stainless steel tanks ranging from 3-8 tonners. Fermentation ranges from 12-16 days. depending on the vineyard, and 2-3 day cold soaks ensure all wine has beautiful color and aromatics. Perfectly pressed into tank and then barreled down the next day in to a combination of new and once used French Oak. This wine is 50% new French oak, and the remaining used. Coopers include Darnajou, Taransaud, and Sylvain. Malolactic Fermentation is completed in barrel and naturally. Wines are racked periodically for clarity and pure expression of fruit. Wine sit in barrel for 20 months to age. Filtered just prior to bottle.

TASTING NOTES - Cabernet Sauvignon from 5 of our premier Napa Valley sites showcases a deep ruby hue and a rich, full-bodied profile driven by the region’s warm climate and well-drained alluvial soils. Expect intense aromas of blackberry, cassis, and black cherry, interwoven with graphite, dark chocolate, and hints of eucalyptus or mint, often accented by vanilla and mocha from French oak aging. On the palate, these wines deliver concentrated fruit, polished yet firm tannins, and balanced acidity, with flavors of plum, dark cocoa, and subtle minerality, culminating in a long, spicy finish. These wines evolve beautifully over 10–20 years, developing complex notes of leather and truffle.

Crafting the Vintage: Our meticulous winemaking begins with fermentation in stainless steel tanks, ranging from 3- to 8-ton capacities. A typical ferment is carefully monitored over 12 to 16 days. To ensure optimal color and aromatic development, a 2-3 day cold soak precedes fermentation. Following a precise press into tank, the wine is promptly transferred to a carefully selected combination of new and once-used French oak barrels the very next day. This particular blend benefits from 30% new French oak, sourced from esteemed coopers including Darnajou, Gamba, St. Martins, and Sylvain. Malolactic fermentation is naturally completed within the barrel. Periodic racking throughout its 20-month barrel aging period ensures clarity and a pure expression of the fruit. A gentle filtration is performed just prior to bottling.

Tasting Profile: This striking red wine, predominantly a blend from Napa Valley's high-altitude AVAs, presents a bold yet elegantly structured profile. Its character is profoundly shaped by the region's volcanic soils and significant diurnal temperature shifts.

A crucial 2-3 day cold soak precedes fermentation, ensuring optimal color and aromatic extraction. The wine is then carefully pressed into tank and, on the very next day, transferred to a thoughtful combination of new and once-used French oak. This particular vintage benefits from 40% new French oak, sourced from our trusted coopers: Darnajou, St. Martins, and Sylvain. Malolactic fermentation proceeds naturally within the barrel, enhancing complexity. We periodically rack the wines to ensure pristine clarity and a pure expression of fruit. After a dedicated 20 months of aging in barrel, a gentle filtration is performed just prior to bottling.

Sensory Journey: This Cabernet Franc, a proud expression of Napa Valley's Oak Knoll District, embodies a refined and beautifully balanced profile. Its character is distinctly shaped by the region's cooler climate and the moderating influence of San Pablo Bay, which extends the growing season, allowing for nuanced flavor development. Aromatic layers reveal deep wild plum, vibrant red berries, and succulent dark cherries, elegantly woven with intriguing hints of mint, sweet roasted peppers, delicate dried roses, and fragrant lavender. On the palate, this wine offers a medium to full body, delivering concentrated flavors of baked plum, bright raspberries, and rich black currant. Subtle accents of spice, tobacco, luxurious sandalwood, and fine leather notes add further intrigue. The finish is persistent, showcasing classic leather, a touch of sweet caramel, and a hint of cinnamon spice, all harmoniously integrated with well-managed oak.
